Jalapeno Poppers!

A few weeks back I harvested the last of my peppers off the bushes.  I had a large amount of both green and jalapeno peppers so for a few days I was scrambling to come up with ways to use them up, besides just chopping and freezing, and this is one of the recipes I tried and loved.

I did do a couple things differently, no offense to The Pioneer Woman, this were just what I had on hand:

homemade cream cheese (so, so good and easy to make!)

pork belly in place of bacon (this I wouldn’t recommend as much as it’s a bit thick to brown nicely and unseasoned, which I didn’t realize until I had half of them already cooked)

All in all though they were amazing and I was even adventurous and tried freezing some before baking.  I haven’t cooked them yet, but I’ll let you know how they turn out.  They would go well with any meal, but I think a bowl of chili and piece of cornbread would be a perfect match!

    OK – so now I want the recipe – or at least where I can find the recipe for homemade cream cheese!!! I did a similar recipe with shredded cheddar in the cream cheese and a few other seasonings – batter covered and deep fried – but yours sounds much yummier!! and maybe not so messy!!
