Summer Salsa

It’s that time of the year again…the time when I can make salsa as much as I want! To me, nothing says “summer” like a fresh batch of homemade salsa!

There are probably about a million different variations of amazing salsa, but here’s mine…

(Disclaimer: I don’t have a set recipe, so all amounts are approximate)

Ingredients:

Tomatoes (this will dictate the size of the batch, so the more the merrier. I usually use about 10)
1 red bell pepper
1 yellow bell pepper
1-2 jalapeños
1 red onion
fresh cilantro
Juice from one lime
Salt and pepper to taste
The first time I made my own salsa, I started by dicing all the tomatoes by hand….twenty minutes later I realized that that method took too long. On my next batch I realized that putting the tomatoes in the blender (or food processor) worked so much better and it made the salsa look like it was from a mexican restaurant, so I stuck with that method.

I start by adding a few tomatoes at a time to the blender to chop them up. Once I reach the desired consistency, I pour that into a large mixing bowl. I repeat this process until I’m finished with all of the tomatoes…if you put them all in at once, you might end up with V8, not salsa

Next, I dice the bell peppers and onions by hand and add them to the bowl (probably can be done in the blender too, but I just haven’t tried that yet)

Finally I add the jalapeños, cilantro and lime juice to the blender and blend until smooth.

Everything gets mixed together and you’re all set with delicious salsa!!
