Beet Pancakes

Beet Pancakes by Helen Dickey

1 cup Hodgson Mills buckwheat flour
1 cup water (you may soak these two ahead of time if you want to)
1 and 1/2 cups grated beets
2/3 cup coconut (shredded, unsweetened and unsulphered)
2 Polyface med eggs

Mix and fry in oil or shortening. You may need to add a little more water to
make batter spread easier.
